  1. Score the fat of the pork belly. Only half cut into the fat. Cuts must be parallel with each other.
  2. Turn the pork belly around, fat down on a dry surface.

  4. Roll up the meat and tie with string.
  5. Rub the fat with a good amount of salt.
  6. Put in a gas rotisserie spit or oven with a rotisserie or a braai (BBQ) on high heat for 30 minutes.
