  2. It's 1 green chilli,chopped and deseeded.
  3. It's 1 stick lemongrass,chopped.
  4. Prepare 1/2 onion,chopped.
  5. It's 1 clove garlic,crushed.
  6. You need 1 teaspoon ground cumin.
  7. It's 1 teaspoon ground coriander.
  8. You need 1 tbsp. Thai fish sauce.
  9. It's 1 lime (zest and juice).
  10. It's 1 small chicken breast.
  11. Prepare 400 ml can of coconut milk.
  12. It's 1 handful fresh coriander leaves to garnish.

Thai Green Curry Soup instructions

  1. In a saucepan fry the chopped onion in the olive oil for a few minutes..
  2. Add the remaining ingredients except the coriander leaves,and bring to the boil.Simmer for about 10 to 15 minutes..
  3. Whilst step 2 is cooking,fry the chopped chicken breast in a little olive oil until browned and cooked through..
  4. Allow to cool to room temperature (as per manufacturer's instructions)..
  5. Pour the contents from Step 2 into the Nutri Ninja and blend for about 30 seconds..
  6. Return the contents to the saucepan and add the cooked chicken breast.Gently reheat until ready to serve..
