- You need oil.
- Prepare white onion chopped.
- Prepare flour tortillas.
- It's boneless chicken diced into 1/2 inch pieces.

Chicken Enchiladas step by step
- Preheat oven to 180 deg, grease a square or rectangular dish.
- Heat oil in a pan. Add onions and saute until onions are soft.
- Add green chillies, pepper and salt. Saute for few more seconds.
- Add chicken and mix well, cook for 8-9 minutes. Keep it aside.
- For homemade Enchiladas Sauce, refer to my earlier recipe.
- Place tortilla on a plate, apply the sauce evenly over it. Add spoonful of black beans, chicken and 1 tbsp cheese at centre.
- Roll the tortillas and place in greased dish. Do this for all the tortillas.
- Add remaining sauce all over tortillas evenly.
- Sprinkle remaining cheese on top.
- Bake for 15-20 minutes. Garnish with cilantro and serve warm.
