- Preheat oven to 170 degrees celsius..
- Place the mixed nuts into a food processor and pulse 1-3 times (depending on how chunky you would like your nuts to be)..
- Place the coconut oil and honey into a saucepan and melt slowly on a low heat stirring..
- Add the rolled oats, chopped nuts, seeds, dried fruit, coconut flakes (optional) and cinnamon into a bowl and mix together until completely combined..
- Add coconut oil and honey or rice malt syrup and combine..
- Pour the combined ingredients into a baking tray and bake for 20-25 minutes or until the muesli has just started to turn a light golden colour (give it a stir every 5 minutes with a fork so that it cooks evenly)..
- Allow to cool and store in an airtight container at room temperature for up to a week..
