- Roughly chop the onions and carrots. Break the garlic blub into cloves, leave them unpeeled.
- Pile all the vegs and the herbs into the middle of a roasting dish and drizzle eith olive oil.
- Place the beef on top of the veggies and drizzle with olive oil..
- Place in oven and immediately lower the oven temperature to 200ΒΊC..
- Cook for 30min..
- Add veggies at this point if desired (I added potatos and trunips)..
- Add a couple of dashes of white wine and cook for another 45min..
- check on your roast occasionally and baste and mix veggies if needed.
- Jamie Oliver recommends letting roast rest at room temperature for 15min before serving. Covered with tin foil snd a tea towel..
