- Prepare Salad Dressing.
- You need Juice of 1 lemon.
- You need 2 tsp honey.
- It's 1/2 cup olive oil.
- You need 1/4 red onion (roughly chopped).
- Prepare 2 tsp whole grain mustard.
- You need Salt and pepper.
- Prepare Salad.
- It's 2 large ripe vine tomatoes.
- You need 1 green chilli.
- You need 1/4 red onion.
- You need 1 pack microwave quinoa & rice mix.
- You need 1 tbsp chopped dill.
Zingy Quinoa & Rice Salad instructions
- Add the dressing ingredients to your blender and blitz until nicely blended - but donโt purรฉe it, a few lumps are fine. Taste it here and adjust with more honey, salt and pepper as you like..
- Chop the salad ingredients. Remove the seeds from the tomatoes before chopping (this stops the salad getting watery). Mix it all together..
- Add the quinoa (check the packet instructions and cook then cool if needed)..
- Add the dressing a bit at a time until you get a good coating - donโt do what I did and just tip it all in. It was a bit too much and made it all just slightly too wet..
