  1. In a pan, heat oil & add the mustard seeds, curry leaves once they splutter, add the garlic, ginger & hing, cook for 2 mins. Now add the turmeric, & potatoes, season with salt & combine the masala with the potatoes. Before removing add chopped coriander & mix well. Combine well & make the vadas..
  2. Dip them in besan batter & deep fry in oil. Fry for 2-3 mins on medium heat till the crust becomes crispy Now take the pav, split it open add the chutneys & the vada. Serve hot with chillies..
