  1. You need 400 gm Cauliflower /phool gobhi.
  2. Prepare 2 medium Potatoes / Aloo.
  3. It's 1 Tomatoes / Tamatar.
  4. Prepare 1 tsp Ginger / Adrak.
  5. You need 1.5 tbsp Fresh Coriander / Cilantro / Hara Dhaniya.
  6. Prepare 1/2 tsp Turmeric Powder / Haldi Powder.
  7. You need 1 tsp Mango Powder / Amchoor Powder.
  8. It's 1/3 tsp Garam Masala Powder.
  9. It's 1 tsp Salt.
  10. You need Tempering / Tadka.
  11. You need 3 tbsp Cooking Oil.
  12. It's 2 Black Cardamom / Badi.
  13. It's 1 tsp Cumin Seeds / Sabut Jeera.
  14. Prepare 2 Cloves / Lavang.
  15. Prepare 1/2 tsp Asafoetida / Hing powder.

Aloo Gobi Sabzi step by step

  1. Wash and soak cauliflower florets in salted lukewarm water to remove the worms if any..
  2. Peel and dice potatoes in medium size pieces..
  3. Open the black cardamom and slightly crush the seeds..
  4. Heat oil in a pan and add cumin seeds and asfoetida..
  5. When seed start crackling add cardamom seeds and cloves..
  6. Now add turmeric,diced potatoes,and chopped ginger..
  7. Saute for 1 minute,cover and cook for 1.5 minute on slow heat..
  8. Now open the pan and add cauliflower and salt,mix and saute for a minute.
  9. Now cover and cook on slow flame till nearly done.Keep stirring in between..
  10. Now add chopped tomato and all the spices,mix gently..
  11. Cover and cook on medium flame till done(approx-1-2 minutes).
  12. Add chopped coriander and serve hot..
